Day 3: Franco Pepe is considered by many to be the world’s greatest pizza maker. Each day at his pizzeria Pepe in Grani, he makes his tender dough by hand every day, using the day’s temperature and humidity as a guide; he also only uses ingredients from small producers in Caserta. The pizzeria in the town of Caiazzo, about a 20-minute drive from Caserta, requires reservations, which open three months in advance.
