Food critic Jonathan Gold put Pepe in Grani, as well as its owner and chef Franco Pepe, on the map in 2014 when he declared it the world’s best pizza. Franco makes his tender dough by hand every day, using the day’s temperature and humidity as a guide; he also only uses ingredients from small producers in Caserta.
