Colorful and opinionated – part showman, part philosopher – Dario Cecchini is perhaps the most famous butcher in all of Italy. He has transformed his hometown of Panzano into a mecca for meat, with visitors arriving from all over the world. The centerpiece of his meat empire is the butcher shop Antica Macelleria Cecchini where if you’re so inclined you can become a butcher for a day (three hour workshop with lunch is 280€ per person).
